Ingredients

  • 1 store-bought pizza dough
  • 2 AKUA Chili Sesame Burgers
  • 2 cups arugula
  • 2 scallions
  • 1/4 cup pickled red onions
  • 1/4 tsp toasted sesame oil
  • 2 tsp lemon juice
  • for the sauce:
  • 1 cup vegan yogurt (I used CocoJune)
  • 2 tbsp Gochugang paste
  • 2 tbsp lemon juice
  • 1 tbsp water
  • 1/2 tsp toasted sesame oil
  • 1/4 tsp each salt and pepper, plus more to taste
  • sesame seeds for topping

Directions:

Shape the pizza dough into a 10 x 4in rectangle and bake at 400 degrees until golden brown (15ish mins) Then mix together the sauce ingredients and crumble the veggie burgers into a pan with 1 tbsp of oil. Cook for 5-10 minutes until crispy around the edges.

Then dress the arugula with 1/4 tsp of toasted sesame oil, 2 tsp of lemon juice, and a pinch of salt. Toss to coat and set aside.

Allow the crust to cool slightly, then add half of the yogurt sauce on top. Layer on the veggie burger crumbles + scallions on top. Add the arugula, pickled red onions, and the remaining yogurt sauce, and then sprinkle with sesame seeds. Enjoy!
