Kelp Burger Stuffed Mushrooms

Ingredients
- 1/2 c. uncooked rice
- 2 tbsp. extra-virgin olive oil, plus more for drizzling
- 1 medium onion, chopped
- 2 sticks of celery
- 3 large carrots
- 2 tbsp. tomato paste
- 3 cloves garlic, minced
- 1 pack of Kelp Burger Ground Meat
- 1 (14.5-oz.) can diced tomatoes
- 1 1/2 tsp. dried oregano
- Kosher salt
- Freshly ground black pepper
- 24oz pack of baby bella mushrooms, stems removed
- 1 c. shredded vegan cheese
- Freshly chopped thyme, for garnish
Kelp Burger Stuffed Mushrooms

Directions:
- Cook rice on stove
- Place mushrooms in the oven at 350 degrees with olive oil over top. Cook for 10-15 minutes
- Meanwhile, heat olive oil in pan over medium heat adding in chopped onion, garlic, carrots, and celery and cook for about 10 minutes
- Add in Kelp Burger Ground Meat & break up like ground beef, mixing in with cooked veggies
- Add tomato paste and dried tomatoes and let simmer until it becomes a thick sauce
- Season with salt, pepper, & oregano
- Take mushrooms out of the oven
- Plate with Kelp Burger Ground Meat inside of the mushrooms and and top with vegan cheese and chopped thyme
