Kelp Burger Stuffed Mushrooms

Kelp Burger Stuffed Mushrooms
(Serves 5-6)


  • 1/2 c. uncooked rice
  • 2 tbsp. extra-virgin olive oil, plus more for drizzling
  • 1 medium onion, chopped
  • 2 sticks of celery
  • 3 large carrots
  • 2 tbsp. tomato paste
  • 3 cloves garlic, minced
  • 1 pack of Kelp Burger Ground Meat
  • 1 (14.5-oz.) can diced tomatoes
  • 1 1/2 tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 24oz pack of baby bella mushrooms, stems removed
  • 1 c. shredded vegan cheese
  • Freshly chopped thyme, for garnish


  1. Cook rice on stove
  2. Place mushrooms in the oven at 350 degrees with olive oil over top. Cook for 10-15 minutes
  3. Meanwhile, heat olive oil in pan over medium heat adding in chopped onion, garlic, carrots, and celery and cook for about 10 minutes
  4. Add in Kelp Burger Ground Meat & break up like ground beef, mixing in with cooked veggies
  5. Add tomato paste and dried tomatoes and let simmer until it becomes a thick sauce
  6. Season with salt, pepper, & oregano
  7. Take mushrooms out of the oven
  8. Plate with Kelp Burger Ground Meat inside of the mushrooms and and top with vegan cheese and chopped thyme
