Butternut Squash Autumn Pasta

Ingredients
- 1 Tbsp. olive oil
- 2 garlic cloves minced
- 1 ½ onion diced
- 1 butternut squash peeled and diced into cubes
- 32 ounces vegetable broth
- 1-2 tsp. salt
- AKUA Kelp Pasta
- 1 Tbsp flour
- Dash of paprika
- Dash of pepper
- Chili flakes (optional)
Butternut Squash Autumn Pasta

Directions:
- Heat olive oil over medium heat
- Add 1 onion and garlic and cook until softened
- Add butternut squash and vegetable broth to the pot.
- Bring everything to a boil and then cover and simmer for 15-20 minutes until squash is cooked all the way through
- Carefully pour entire contents of pot into blender
- Add salt and blend until smooth
- Rehydrate 3 spirals of Kelp Pasta and place to the side
- In a separate sauce pan, place ½ diced onion and olive oil over medium heat
- Add in paprika, pepper, and salt and cook until onion is translucent
- Add in flour and mix around until dissolved.
- Pour sauce from blender into pan and cook for a few minutes, allowing it to thicken
- Add in Kelp Pasta and cook for 5-6 more minutes
- Plate and serve with your favorite fall vegetables
